Tip of the Month: Epazote

Epazote is an herb used daily in Mexican cooking in the heart of Mexico.

We hand pick the Epazote in the La Villa Bonita garden to place in our black beans. This tip may find you searching for a source of Epizote.

Epazote has been used in Mexican cooking since before the Spanish arrived from the Old World, and it’s distinguished by its aromatic, earthy flavor.

Epazote is thought to help regulate digestion and relieve stomach cramps. Its stomach-easing properties can help with gas and bloating, which is why epazote is traditionally used when cooking black beans.

Epazote is often paired with huitlacoche (the pungent corn fungus) and also finds its way into a variety of soups, tamales, enchiladas nd chilaquiles.

You may need to order seeds or plants on-line, since I have never found the actual plant at any nursery.
