Savory Spoon Welcomes Whistling Swan Executive Chef

The Savory Spoon Cooking School welcomes Adam Schierl, Executive Chef at the Whistling Swan, on June 20 at 6 pm. This is Schierl’s first appearance at the Savory Spoon Cooking School, and he will share his culinary talents with a very special menu.

The Whistling Swan prides themselves in buying local and supporting local farmers and producers. Schierl has worked at Hinterland Restaurant in Milwaukee in the Third Ward and the Hinterland Company for years and brings a wealth of culinary knowledge and creativity to Door County. His culinary experience allows him to base his menu on the best of each season. Schierl’s expertise and passion for local and seasonal foods and his fine selection of fresh foods make his menus exciting and trendy.

The menu includes: cured hamachi sashimi compressed apples; avocado; sorrel, lemon oil; grilled asparagus; grilled flatiron steak; grilled romaine, romesco sauce; seared scallops, roasted maitake mushroom salad; and brown butter hazelnut cake with lemon curd.
